St. Patrick’s Day Spinach Pancakes
I just did these for my kids and I had to share! I am not a huge fan of food coloring, but I like to make green pancakes for St. Patrick’s Day. On a whim I decided to try spinach. I wasn’t super optimistic because I thought the flavor would come through. But I was so surprised when nobody could tell! Even my husband thought I had just used green food coloring! They were so yummy! The ultimate mommy victory! Veggies AND no food coloring!
Ingredients
3 cups flour
3/4 tsp. salt
4 tbsp. white sugar
1 tbsp. baking powder
1/2 tbsp. baking soda
2 1/4 cups milk
3/4 cup fresh spinach
3 eggs
1 tsp. vanilla
1/3 cup vegetable oil
I like to mix my pancake batter together in a plastic pitcher because it makes it easy to just pour onto the griddle. I throw all the ingredients in and then blend it with my immersion blender to get all the lumps out. When you add spinach this is super necessary because it will puree the spinach in with the rest of the ingredients so that you don’t see any of the texture. You just want green, you don’t want to see the little pieces of spinach. You can also mix it in your blender if you want to.
Then you pour the pancake batter onto a lightly greases griddle that has had a chance to heat up a bit on medium heat. You can make the pancakes as big or small as you want. Once you start to see bubbles forming in the batter, flip the pancakes and allow them to brown on the other side. Serve hot!
The best syrup EVER is Golden Griddle. Everything else tastes nasty to me. It is hard to find, but you can get it at Winco.
